Settlements API documentation corrections

Corrected the response documentation for the List settlement payments, captures and refunds endpoints. Response examples now reflect the correct mode (live) and status (paid, succeeded, refunded) values. The mode field description has been updated to clarify that settlements are only supported in live mode.
